Fit After Forty and Beyond
Dear Reader,
Are you like me and have a hard time with eating beans and grains, despite the fact they’re supposed to be ‘healthy’?
Do you gain fat when you eat even “non-refined” healthy carbs like brown rice?
I did — until recently.
Here is a super easy weight loss tip:
Soak all grains and legumes for 24 hours prior to cooking them.
Don’t worry — they taste the same. They’re even more fluffy. But, more important than that –
they are now “lectin-free”…or 90% there.
What are lectins?
Lectins are protein and protein-family substances that love to bind to stuff and mess with your body’s cellular structure.
The have a nasty habit of rendering even the most healthy of foods (almost always plant-based) very unhealthy for you to consume.
This does not have to be.
Simply soaking brown rice and legumes (beans) in water for 24 hours, according to food allergy researcher Dr. David Freed, causes the lectins in both foods to be destroyed 10 minutes into cooking.
This will not happen if you cook grains normally.
This is why you may be sniffling or having a hard time with “good carbs” in your diet. There are other reasons, but I’ve found this to be the ace in the hole.
Try it and see if your grains don’t go down better.

I cook legumes (split peas, black beans, and lentils are my favorites) twice each week. I always soak them for 24 hours because that was how I was taught when I lived in the South. Now I finally know why! Thank you for this informative material. I will visit your site often.

Connie - Living in the South must have been great! I grew up in the Midwest and my family NEVER ate split peas, black beans, or lentils. Can you believe it?!
So, after I got married and began eating more variety, I tried and like them all. They are so healthy and there is SO MUCH a cook can do with them.
Thanks for stopping by! I had jury duty this month and my blog missed me, but, I am back!

Robin, I have heard about soaking, and in fact always soak my beans before cooking, but I just do an over night soak. Will 24 hours really make a difference?
I get so bloated from eating the “good stuff” and I am so frustrated. Since having my last two babes, who are 7 and 8 now, I have not been able to lose weight. The only time I had any success was when I was on a liquid fast for a week. This is not something I can maintain, nor wish to.
My metabolism seems to be very sluggish, my energy level is low, I’m in peri-menopause (I think) and I’m tired of being fat and tired!
I really want to go to our Naturopath to get a full blood work up done. Not in our budget quite yet, but I also have to consider the possibility of supplements… that I may need to take to get things all back to good shape, and that is definitely not in the budget either.
I really want to be proactive, but I’m a bit past the preventive stage now and just want to find the right foods, so that I do not feel pumped full of air or plugged up from. Ah, is that possible?

Robin, I looked at the Simply Eat info. Having been there, done that with so many “diets”, “eating plans”, … I am wondering if this is similar to anything that I might already own. I realize that you can not see my book shelves so you don’t know what I have, but I would like to chat about this.
